    Nigerian Meat Pie

    The key to the uniqueness? 2 things: 1)curry powder, and not just any curry powder but an African blend that’s quite different from and the various Indian spice blends. You could substitute Jamaican curry powder or Madras in this recipe and you can make the filling a couple of days ahead. 2) the green peppers – the lend a peculiar flavor to the filling!     Some tips:
    Its easier to slice the beef if you freeze it for an hour prior to use
    You can use store-bought peanut butter but you will need to thin it by gentle heating to which you can add a dash of coconut milk or water to create a thick pouring consistency
    The spice measurements are a guide – adjust them to suit your taste.
    Note, the best tasting suya is cooked, left to rest for a couple of hours and then reheated gently over the flames…of your BBQ!

    Jollof Rice Recipe (nigerian)

    Some notes:
    – This makes a large pot but you can successfully halve this recipe
    – If you’re using thinner long grain rice like basmati rice or scented rice, use less stock – so 3 – 4 cups not 5 – 6; and less tomato sauce – say 1/2 – 2/3rd. Leave the tomato puree as is and slightly adjust the spices
    – When you add the rice in Step 4, trust the process – leave it to steam without fretting. Trust me, it’ll be fine
